Cheesecake is a classic and indulgent dessert loved by many. Here's a full recipe to make a delicious homemade cheesecake:
Ingredients:
For the Crust:- 200g (about 1 ¾ cups) graham cracker crumbs
- 100g (1/2 cup) unsalted butter, melted
- 2 tablespoons granulated sugar (optional)
For the Cheesecake Filling:
- 900g (32 oz) cream cheese, softened
- 200g (1 cup) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 250ml (1 cup) sour cream
- Zest of 1 lemon (optional)
For the Topping (optional):
- Fruit preserves or fresh fruit of your choice
- Whipped cream
Instructions:
Preparing the Crust:
Preheat your oven to 180°C (350°F).
In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar (if desired). Mix until the crumbs are evenly moistened and resemble wet sand.
Press the crumb mixture into the bottom of a 9-inch (23 cm) springform pan, using the back of a spoon or your fingertips to create an even layer.
Bake the crust in the preheated oven for about 10 minutes until it sets. Remove from the oven and let it cool while you prepare the cheesecake filling.
Making the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
Add the eggs, one at a time, beating well after each addition. Make sure to scrape down the sides of the bowl to ensure everything is well combined.
Mix in the vanilla extract, sour cream, and lemon zest (if using). Continue to beat until the mixture is smooth and no lumps remain.
Assembling and Baking the Cheesecake:
Pour the cheesecake filling over the cooled crust in the springform pan.
Smooth the top with a spatula to create an even surface.
Place the springform pan on a baking sheet to catch any potential leaks during baking.
Bake the cheesecake in the preheated oven for approximately 50-60 minutes, or until the edges are set and the center is slightly jiggly.
Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour to gradually cool down. This helps prevent cracking.
Remove the cheesecake from the oven and let it cool completely at room temperature.
Chilling and Serving:
Once the cheesecake has cooled to room temperature, transfer it to the refrigerator and chill for at least 4 hours, preferably overnight. Chilling helps the cheesecake to set and develop its flavors.
Before serving, carefully remove the sides of the springform pan.
If desired, top the cheesecake with fruit preserves or fresh fruit of your choice. You can also add a dollop of whipped cream.
